Food and beverage processing wastes often contain resources that can be recovered or extracted for economic benefit to the industry. These same resource extractions are also likely to make the industry more environmentally sustainable. Focus on these wastes in this learning module includes several case studies and comparisons of solutions that can be applied to other industries with similar waste challenges.

At the end of this learning module, participants will be able to

  • list possible solutions to wastewater treatment and reuse challenges faced by the food and beverage industry;
  • describe findings of a study to assess methane potential of a soy protein extraction process wastewater, including how the high methane potential of the soy protein wastewater would be an excellent source to recover energy and water;
  • explain and compare the assessment of water reuse costs in the beverage and dairy industries; and
  • summarize a water reuse approach for a frozen dessert manufacturer to reduce water and wastewater utility costs.

This learning module can also be purchased as a part of the Food and Beverage Water Management short course.
